Breakfast for Dinner?


CHOCOLATE CHIP PANCAKES!

When I was a kid, there was a restaurant near our home that we used to go to once in awhile on a Sunday morning, after church. It was called Uncle John's Pancake House (I *think*). It was my chance to get my most favorite pancake breakfast: Chocolate Chip Pancakes with Whipped Cream and Boysenberry Syrup. I loved it!!!

So now, one of our regular meals for dinner is a breakfast which includes chocolate chip pancakes, scrambled eggs with cheese, and breakfast sausage links. We don't do whipped cream or boysenberry syrup (I wouldn't even know where to find that!), just plain maple syrup. The kids LOVE it.

One thing I do add to the pancake mix is bananas because I figure it's good to add something that is actually healthy to this meal, lol. If I have bananas that are going bad, but won't be making pancakes anytime soon, I just peel the bananas, put them in a freezer ziplock bag, and freeze them until I make pancakes. Then I just defrost them and toss them into the batter and use the mixer to mash/mix them up. This way, the extra ripe bananas don't go to waste.

When you first make these, the chocolate chips are nice and warm and melted, mmm! We love them that way, but we also love them the next morning because then the melted chocolate chips are solidified again and it's like eating a nice chocolaty snack. I always make a bunch so we have a few left over to eat the next morning!
